"I’m seeing AT&T Stadium, a city-owned 85,000-seat stadium with a retractable roof in Arlington, Texas, roll out its new 2022–2023 menu items on Sunday, September 11, when the Cowboys host the Tampa Bay Buccaneers. The new lineup expands the plant-based options introduced last year and leans into a Dallas aesthetic: a low-roasted steak dipped in au jus on a toasted bun with arugula, provolone, creamy horseradish sauce, and caramelized onions; Cowboys mac and cheese topped with garlic butter–poached lobster and fresh parsley; a bolillo bun layered with fresh refried beans and your choice of house-made salsa chicken or pork cooked barbacoa or pastor, finished with queso fresco, lettuce, tomato, red onion, and guacamole; a brioche piled high with fried mozzarella sticks, house-made marinara, an Angus burger patty, and pepper jack cheese; fried chicken tossed in mango-habanero sauce with house-made pineapple slaw; focaccia topped with house-made olive salad and layers of capicola, mortadella, ham, salami, provolone, and mozzarella; and vegetarian offerings such as Tator tots drizzled with jalapeño jack cheese, guacamole, and sour cream topped with Sweet Earth’s plant-based chicken in Cholula sauce with pico de gallo and lime, plus blue corn tortilla chips with jalapeño jack queso and Sweet Earth’s plant-based chicken in buffalo sauce finished with pickled jalapeños." - Courtney E.
