"Inside the ITHQ’s Plateau building, I’m watching the new bar Blanc Bec prepare to open at the end of the month (expected March 31). It will showcase some of Quebec’s best cheeses—various small plates and presumed cheese plates—while selling strictly local beers, offering a wine list heavy on Canadian/Québécois options (exact offerings not yet released), and serving cocktails that incorporate local flavours. The bar is intended to be a more casual, relaxed complement to the relatively formal ITHQ restaurant, will be partly run by students (particularly those studying service and wine) to instill appreciation for local products and artisans, and is being launched in tandem with the Producteurs de Lait du Québec, which explains its cheese focus." - Tim Forster
