"As Fairfax City's first nanobrewery and brewpub, I learned that Chubby Squirrel Brewing Company is a three-barrel operation taking shape inside the former Shorty's Deli space and is aiming to have taps flowing by April with a tentative grand opening in May. Co-founders Boyd Harrison and Adam Smith plan to pour single-malt, single-hop style brews including "a big IPA" and a traditional nitrogen-infused stout, along with a Vienna malt–driven beer, a lemon drop saison, a classic hefeweizen, and possibly a pilsner; they expect to rotate in roughly two new beers per week and hope to bring in locally produced hard cider, mead, and wine. The in-house kitchen is slated to serve bar fare from traditional Buffalo wings and assorted pierogies to savory and sweet gourmet grilled cheese and gravy-drenched poutine, with the option to top cheese-curd fries with duck or sausage, and initial hours are projected to be Thu–Fri 3 p.m.–9 p.m. and Sat–Sun 11 a.m.–9 p.m., with Sunday brunch featuring seasonal "beermosas" a possible later addition." - Warren Rojas
