"I note that the three-Michelin-star restaurant introduced a $5,000-a-year membership called Quince & Co., and that the launch sold out within weeks; owners Michael and Lindsay Tusk capped the program at 80 members to formalize long-standing relationships with regulars and create more financial stability during the pandemic. The membership includes a $1,000 dining budget usable at Quince, Cotogna, or Verjus, prioritized reservations that effectively give members first access to indoor seating when Quince reopens, quarterly provisions boxes sourced from the farm, and exclusive events such as apple picking, cider pressing, beekeeping, and cheesemaking workshops.
