"After nearly nine years downtown, owner and pastry chef Katy Gerdes lamented leaving the location because the lack of downtown workers and foot traffic made it untenable; the bakery is moving into the newly renovated Texa-Tonka strip mall in St. Louis Park. The new spot will expand the doughnut, cake, and other sweet-treat offerings the bakery is known for, add a coffee bar serving espresso drinks made with beans from Folly Coffee, and offer brewed teas and kombucha on tap. Gerdes’s Frio Frio ice lolly company will share kitchen space and — if all goes to plan — sell boozy frozen treats, and there’s an expansive patio the bakery will share with neighbor Revival. The downtown shop has been closed to the public since the pandemic began, with orders shipped overnight through the website, and its popular doughnut outpost at the airport has only just recently reopened." - Joy Summers
