"The 24-hour comfort food destination Citizens Kitchen & Bar has been a conventioneer favorite for casino coffee shop staples since its debut in early 2013 at Mandalay Bay. The restaurant is making its own plans to adapt its serving practices once Gov. Steve Sisolak lifts a directive to close dine-in restaurants and casinos statewide to curb the spread of COVID-19. Prepping for the resort’s eventual return, initial paperwork allocated an estimated $45,000 to remodel the contact-free walk-up quick-service counter that featured, wraps, salads, sandwiches, and desserts before Mandalay Bay closed back in March. Parent company SBE has confirmed the changes, but updated the final budget will hit a much more substantial $200,000, with work now scheduled to begin in May." - Bradley Martin
