"Chef Darren McGrady, a former royal chef who cooked for Queen Elizabeth II and Princess Diana, opened Winston’s British Fish N Chips in early March in Vancouver, Washington. The food cart serves fried cod, chicken wings, and smoked fish chowder, among other British dishes. McGrady emphasizes authenticity in his recipe for fish and chips, using frozen-at-sea Alaskan cod and Yukon Gold potatoes, served with scratch-made mushy Marrowfat peas or curry sauce, and a unique chippy sauce.
