"After a 15-year tenure cooking in the kitchens of Buckingham Palace and serving Princess Diana, chef Darren McGrady opened Winston's British Fish N Chips in early March, operating out of a church parking lot in Vancouver, Washington (now open at 2711 NE Andresen Road). His vision is a true-to-form British chippy: he prizes cod above other fish and serves frozen-at-sea Alaskan cod with Yukon Gold potatoes, scratch-made mushy Marrowfat peas or curry sauce, and the customary malt vinegar, plus a house chippy sauce — a vinegar-based brown sauce McGrady says is regional to Edinburgh.
