"Tucked into downtown’s historic Hermitage Hotel, I found The Pink Hermit by Jean-Georges to be a dainty, morning-to-night cafe that brings a sun-drenched spot for coffees, pastries, and takeout-friendly sandwiches and salads to the neighborhood. Open weekdays from 7 a.m. to 9 p.m., it kicks off the day with juices, espresso drinks, and loose-leaf teas from In Pursuit of Tea, plus bakery bites like brown butter chocolate chip cookies and vegan blueberry matcha muffins, chia seed pudding, and croissants stuffed with egg whites and goat cheese. Savory options include brioche-roll sandwiches such as prosciutto and mozzarella or ham and gruyere, along with seared tuna niçoise and roasted beet salads. A sit-down dinner menu aimed at pre- and post-theater meet-ups offers decadent bar snacks, French wines by the glass, elegant cocktails (a raspberry lychee bellini and a Plymouth gin-filled cucumber martini and negroni), wood-fired pizza with black truffles, ahi tuna tartare, elaborate charcuterie and cheese boards, an egg toast topped with caviar ($58), and lush desserts like a salted caramel fudge sundae.
