"Opened inside Morgan Street Food Hall and named for owner Niall Hanley’s Irish aunt, this spot bills itself as Raleigh’s first gin-focused bar and showcases gin, absinthe, vermouth, and a wide range of tonics with an emphasis on regional terroir. Hanley teamed with mixologist and managing partner Greg Ewan to curate more than 30 gins from countries including Ireland, Scotland, England, France, Germany, Japan, and the United States, plus 10+ styles of tonic; the menu nods to London’s gin palaces, celebrates vermouth in various Martini iterations, and features modern craft touches such as an in-house ice-carving program. The bar highlights local North Carolina spirits—Durham Distillery’s Conniption gins, Sutler’s Gin, Southern Artisan Spirits’ Cardinal Dry and Barrel-Rested gins, Chemistgin, and Alley Twenty Six’s tonic syrup—while rotating rare selections like Tanqueray Bloomsbury and Xoriguer Gin de Mahon. The vibe is inviting and fresh, with a full-back mural by Byran Stacy, vibrant green and purple velvet seating, dramatic silver wingback chairs, color-changing lighting, and a cozy, hidden-in-plain-sight layout that seats up to 50; it has its own entrance next to Iyla’s Southern Kitchen (plus a Morgan Street entrance) and is open daily from 4 p.m. to 2 a.m." - Jenn Rice
