Besides, just perusing the menu takes some time: It starts with 10 different broths, followed by about 25 choices of meat and seafood (think brisket and crab, lamb and clams) and a similarly sized selection of vegetables and starches, including bok choy, lotus root, tofu skin roll, and udon.
