The Chez Billy Sud Owners Will Debut a Dreamy French Bistro In Fairfax This Month - Eater DC
"Brothers Eric and Ian Hilton, the hospitality duo behind Chez Billy Sud, Marvin, El Rey, and Brixton, and several other D.C. bars, have set an opening date for their first Northern Virginia project. A French bistro named Parc de Ville in Merrifield’s Mosaic District (8296 Glass Alley) will start accepting customers on Monday, November 18. Chez Billy chef Brendan L’Etoile designed a menu that pairs classics like onion soup, omelets, and croques sandwiches with more innovative orders like poached prawns with avocado, grapefruit, and Marie Rose sauce. There will be a boudin blanc (white sausage) served with pommes purée, roasted apples, and cider.
