"Opened last week as the group's seventh location in Brighton, this nearly 5,000-square-foot spot combines a front-of-house cafe with a fully fledged roasting operation and commissary kitchen. A familiar menu of bagels (kettle‑boiled), pastries, teas and coffee beverages will be produced on-site — with about 800 square feet dedicated to baking scones, muffins and breads — while in-house roasting gives the chain full control over bean selection and roast profiles (replacing a brief contract with a Philadelphia roastery) to improve coffee quality across all locations. The cafe seats roughly 25 indoors, offers seasonal outdoor seating, operates seven days a week from 7 a.m. to 5 p.m., and the company is also planning a future Harvard Square location." - Dana Hatic
