"A mini-food-hall space that debuted in Westlake Village in December 2024, this location launched with concepts such as Mini Kabob, What’s Gaby Eating, and The Cheese Store of Beverly Hills and features a varied menu ordered through kiosks and modified counter service. The space offers a smattering of interior tables, a more sprawling outdoor patio, and grab-and-go items supplied by Joan’s on Third (items currently being phased out), while also supporting takeout and delivery. The operator plans multiple outlets in affluent but underserved Southern California neighborhoods such as Manhattan Beach. As with similar chef- and influencer-driven multi-menu concepts, the model centralizes preparation to gain the benefits of a food hall while promising more consistent cooking; the outstanding question is whether operators of these multi-chef halls can consistently produce food of quality worthy of the names on the menus." - Matthew Kang
