"I came across a 100 percent vegan sushi-and-entrees concept partially opened on the westside by Colorado chef Mindy Lim, operating in a 1,190-square-foot space inside the Whole Foods Marketplace near the Tenaya Way intersection. The food is plant-based Asian-fusion fast food—sushi, vegan entrees, pressed juices, and smoothies—with menu items ranging from miso soup and stuffed jalapeño peppers to tempura-fired king oyster mushrooms that stand in for calamari. Sushi choices include pickled vegetables, spicy tofu, avocado, roasted yellow bell pepper nigiri, and roe “pockets” made from carrot juice and algae, while entrees feature tempura-fried gluten chunks prepared as sesame chicken and a tonkatsu made from panko-fried tofu skin. Chef Lim, who previously owned Boulder’s My Ramen & Izakaya and its ramen, rice bowls, stir-fry noodles, Japanese small plates, and signature juices and smoothies, brings that background to this vegan menu.
