"Four months ago, Boulder’s Rio Grande Mexican restaurant closed for a complete renovation, temporarily serving out of a Pearl Street location during the makeover. Now the restaurant re-emerges with updated furniture, a fresh coat of paint, new carpet and flooring, as well as cozier seating and a “living wall.” The restaurant now serves its 11 varieties of margaritas and new lineup of tequilas at a new bar taking center stage. Diners can see the roster of tequilas lined up on a wall with shelves showcasing the new collection. Also new, an open kitchen where customers can watch the flame-grilled fajitas and handmade tortillas as they’re made from locally sourced ingredients. New menu items include upgraded tacos with seasonal monthly specials and a la carte, mix-and-match ordering options for beer-braised carnitas, tequila shrimp, or grilled steak varieties.
