"What started in 1937 as a family owned dry goods and meat market three generations ago in Eunice is now Johnson’s Boucaniére in downtown Lafayette run by granddaughter Lori Johnson Walls. Barbecue, smoked meats, plate lunches, and sandwiches are the menu’s anchor here, but specialty meats are still a big draw. Besides boudin, there is tasso, fresh and smoked pork, or pork and beef sausage, all available by the pound. Pitmaster Greg Walls is also married to the boss." - Beth D’Addono
