"I’ve noticed a crisp new wine bar in Old Montreal that opened a couple of weeks ago — Buvette Pastek — currently serving breakfast, lunch, and weekend brunch but still waiting on its liquor permit, so libations aren’t yet allowed on the table and its dinner service has been delayed. Co-owner Thomas Vernis, who also runs nearby spots like Santos supper club, Unibar, and Tommy Café, has named the bar as a playful nod to “pastèque” (watermelon) and is aiming to feature fresh, fruity rosé, orange, and rosato wines. Devon Skeaff, with experience at Chuck Hughes’s Garde Manger and Martin Picard’s Au Pied de Cochon, oversees the food, which includes sandwiches, salads, charcuterie, cheese, seafood conserves, and focaccia; brunch is split between savoury and sweet with offerings such as “eggs e pepe” toast and whipped ricotta topped with peaches. Once dinner begins it will lean more nautical with octopus, razor clams, scallops in a Serrano ham sauce, and a shrimp and zucchini scialatelli pasta. The 50-seat space, designed by studio Lamaisoncharlotte, features bright whites, mellow pinks, soft round-edged furniture, and plant life peeking through ceiling panels; a three-season inner courtyard garden is planned for fall and a street-side summer terrasse is open now. Pastek runs the food-and-beverage program for the Saint-Paul Street building that houses a Sonder outpost, and is located at 209 St Paul West, open Tuesday–Friday 9 a.m.–3 p.m. and Saturday–Sunday 10 a.m.–3 p.m., with hours subject to change." - Valerie Silva
