"Palma offers a unique dining experience with a rotating nine-course tasting menu that rings in at an unheard-of (in Miami, at least) $85. Miami-born chef Juan Camilo Liscano’s attention to detail is evident in the meticulously prepared dishes that change monthly, such as a Colombian-inspired arepa de choclo with uni, caramelized onion, and egg yolk jam; a grilled fish with caramelized porcini sauce, jambon de Bayonne, espelette XO sauce, and asparagus; and anything-but-average ice cream sandwich made with 10-year aged port ice cream, sourdough miso and white chocolate cookies, puffed buckwheat, and maple syrup. Wine can be paired or ordered by the glass or bottle.
