"Set to open this fall inside the refreshed Le Germain on Mansfield Street, Le Boulevardier will be led by David Pellizzari, former co‑owner of Mile End’s Lili Co, as the hotel’s in-house restaurant replacing Daniel Vézina’s Laurie Raphaël. Pellizzari says the focus will be ultra-classic French cuisine inspired by Auguste Escoffier, with possible dishes named in the press including meaty, complex lapin à la royale, Provençal-style frog’s legs, and Burgundy snails. The menu draws on brasserie and café-bistro traditions, emphasizes fresh, local fare with an emphasis on seafood, and will be paired with a French-inspired wine list, reinvented retro cocktails, and a strong selection of whisk(e)ys and cognacs; the restaurant space was refreshed during the hotel’s renovation and will feature design by Zebulon Perron." - Tim Forster
