"A first-of-its-kind Caribbean steakhouse from James Beard Award winner and Top Chef champion Kwame Onwuachi, slated to open on the Las Vegas Strip in late 2025. Rooted in the history of Jamaica’s Maroons, the concept centers on live-fire cooking and jerk techniques—think jerk rubs, dry-aged cuts, scotch bonnet–infused sauces, and grilled seafood—paired with sides drawing on West African, Jamaican, and Creole traditions. The menu channels the same Afro-Caribbean through-lines seen in the chef’s other projects while translating them into Las Vegas’s theatrical steakhouse format; the project also positions itself as a rare Black-owned Strip restaurant that foregrounds diasporic flavors.
