My friend, who swore restaurant versions could never match homemade, was blown away by these: small and surprisingly light, dressed with garlic, onions, basil, eggs, Parmigiano, and just a touch of breadcrumbs, then braised in tomato sauce and served with dollops of creamy ricotta and croutons that soak up every drop.
