"Opening on Saturday, May 5 (Cinco de Mayo) in the former Saffire space at The Factory at Franklin, the newest project from the team behind Burger Up Cool Springs, Five Daughters Bakery, Franklin Juice and Honest Coffee Roasters—named after a lead investor Bill Butler’s pet bull—Mojo’s Tacos will offer tacos (regular and puffy) with fillings such as hot chicken, Korean cauliflower, Baja fish, brisket and fried avocado, plus nachos, a kids’ menu, paletas (blueberry, mango and strawberry buttermilk for children; sangria, margarita and mint julep flavors for adults), and a full bar; to celebrate the grand opening, the truck and the restaurant will serve tacos at 230 Franklin Rd. from 4 p.m. to 8 p.m., with fresh paletas for kids and adults and the Kentucky Derby shown on the televisions." - Erin Perkins
