"Starting Tuesday, December 10 the four tacos that El Califa is famous for land on the menu at the Bethesda location (4749 Bethesda Avenue, Bethesda, Maryland). Seven months after the Michelin Guide awarded its first-ever star to a taco stand, this collaboration brings those four tacos — made with "four beautiful slices of meat," as founder Dario Wolos puts it — to DMV diners. The cuts were developed in New York alongside Pat LaFrieda: "We brought Mario to visit us in New York, and we spent days just finding the right butcher who could create the kinds of cuts that he wanted," Wolos says, and "we finally visited Pat LaFrieda, and he took us downstairs where we worked together for hours to get the cuts just right." Those cuts are made each night, allowed to rest, shipped to the DMV locations, and then grilled a la plancha for service. Three of the four tacos on the collaboration menu feature beef (the Gaonera is based on the filet mignon cut, the Costilla comes from the rib, and the Bisteck uses a round tip cut of beef) while the Chuleta is topped with a pork chop; the tacos are intentionally served without cilantro and onion to distinctly highlight the meat. All tacos are served on freshly made on-site tortillas and accompanied by two salsas — a green salsa (a salsa cruda verde with tomatillo, garlic, and jalapeño) and a salsa morita (made with chile morita, tomato, and garlic) — both of which will be available to take home by the jar.
