"After 22 years serving some of Capitol Hill’s most coveted sandwiches, HoneyHole is undergoing significant changes: founding brothers Sean and Devon London and co-owner Hannah Roberts have sold the shop to Kristin and Patrick Rye, who relocated from San Diego after falling in love with the place on a visit in early 2020. Despite pandemic setbacks — HoneyHole was closed for months before reopening in August — the Ryes plan to preserve the restaurant’s quirky atmosphere (including its floating shark and hang-gliding lizard) and its commitment to local sourcing and sustainable ingredients — Kristin previously operated a heritage-breed chicken farm — while ramping up takeout and eventually expanding; they’re searching for a larger second location across neighborhoods from Burien to Ballard to accommodate both takeout and dine-in but say they’re not in a rush. The menu won’t be revamped: longtime favorites such as the Dude (marinated flank steak) and the Emilio Pestevez (smoked tomato field roast, pesto, and goat cheese) will remain, chili and the Corleone pastrami sandwich (absent since last March because the meat is cured onsite) will return with Corleone preorders launching Friday, January 27, and booze for takeout will be coming back soon." - Gabe Guarente
