Chef Showcase for Wagyu Beef Expands in the South Bay | Eater San Diego

"Originally opened in 2020 by chef Steve Brown as a butcher shop and burger bar in his hometown of Imperial Beach, this launching point for his wagyu-focused empire has reopened as a full-service restaurant that brings tasting-menu–style dining to the South Bay. It has doubled its footprint with a new dining room and a kitchen-facing, 16-seat chef’s counter where Brown will offer “Study Hall,” a 12-course progressive dinner and education on wagyu beef starting Saturday, June 17 and running every other Saturday. While his famous smashburgers remain available, the menu now mirrors Swagyu’s Pacific Beach steakhouse with a wider range of dishes—including tomahawk steaks and wagyu flights—and offers beer, wine, and sake-based cocktails.
