"Opening a sixth restaurant on Caledonian Road this autumn, the group is bringing its tightly focused, affordably priced steak format—no reservations and a concise menu—into King's Cross. Since launching as a pop-up in 2012 it has grown quickly, nearly doubling pre-tax profit from £233,448 to £456,110 between 2016 and 2017, though expansion slowed after August 2017; the new site signals a return to earlier growth plans. Menu additions for the new outlet include fries finished in wagyu fat, “Bloody Mary” boxes, flash-frozen ice cream and more beef cuts such as underblade fillet, tri tip and rump cap, reflecting the founders' obsessive, test-driven approach to quality and flavour. Operating as a small chain focused on scalable efficiency, it aims to do a few things exceptionally well—great steak for everyone." - James Hansen
