"The Mills 50 absinthe house shakes and stirs some stellar cocktails, no doubt, but an accompanying menu overseen by chef Eric Norvelus keeps things in the Spanish wheelhouse. Dishes like a housemade chorizo smashburger, pork belly served atop pasilla mole, and charred octopus braised in fennel and smoked pimentón topped with a mound of seasoned black lentils are the stuff writers coo about. The bar is named after the Hemingway work, and Papa certainly would’ve knocked back a few namesake Death in the Afternoons (absinthe and champagne) and cooed about them. Basque cheesecake makes a fine and filling ending." - Faiyaz Kara
