"I’m expecting a full-service restaurant and test kitchen to open in coastal Oceanside by late summer that will serve as a flagship for The Lab Collaborative. After two years in development, managing partner Jack Everett—who co-owns Senor Grubby’s and has worked in corporate restaurants for 20 years—says the pandemic helped solidify the concept by highlighting the need for places to pivot on a dime. The 4,179-square-foot space at Pierside North will include a custom glassed-in kitchen, at least 70 outdoor seats, and will host local chef pop-ups as the buildout progresses. Ramiro Guerra (formerly of Belching Beaver) will be the resident executive chef, and the offering will pair a more static American-style bistro menu with quarterly menus created by guest chefs and bartenders that could eventually evolve into stand-alone concepts; the ownership team also hopes to spin off other restaurants and projects nearby, from a fast-casual spot to a distillery, and is even looking to purchase a nearby farm." - Candice Woo
