"After opening its first Seattle location at Pacific Place in September, this wildly popular hot pot chain has quietly debuted a Bellevue Pacific Center outpost. Since opening in China in 1994, it has built a reputation for rich broths, extensive dipping options, and entertaining table-side service — including staffers dancing with hand-made noodles. Due to COVID-19 restrictions, the Bellevue restaurant is currently open only for takeout and delivery (ordering available through GrubHub, Uber Eats, and DoorDash), while the downtown Pacific Place spot is operating dine-in at half capacity and is already a tough reservation to get. Critics have praised the chain: Jonathan Gold once described it as “the Ferrari of Chinese hot pot restaurants,” and Robert Sietsema highlighted the “bewildering number of broths” and an atmosphere that felt more like an “adult day care than a restaurant.”" - Gabe Guarente
