"This November I'll see Brad Kilgore's Asian-inspired, Tokyo-style cocktail lounge debut in the Miami Design District; for the Tokyo-style bar Kilgore has teamed up with bartender Nico de Sototo to create a drink menu that mixes straightforward, “reasonably” priced drinks with an assortment of “luxury cocktails” using ingredients like sakura, Wakoucha black tea and bamboo salt. It's his first new project under his newly launched Kilgore Culinary group after announcing on Instagram that he has taken full ownership of his Wynwood restaurant, Alter. The space will offer indoor and outdoor seating with a large bar area, oversized banquettes, and a custom-made 1,000-butterfly-knife chandelier inside, plus sofas and ottomans outdoors; Funktion One will handle the music and coordinate rotating guest DJs and playlists. Kaido will also feature small plates, crudos, robatayaki and dishes such as uni fondue and a wagyu katsu sandwich to help soak up the cocktails." - Eater Staff
