"In Pioneer Square I’m watching a new restaurant co-owned by Chef Joe Tuesta and his wife Imelda Diez-Tipa get ready to open: Senor Carbon Peruvian Cuisine is one city approval away from launching at 625 1st ave suite 100. Tuesta brings a culinary career that spans two continents and multiple traditions (he was eventually promoted to sushi chef at a Radisson Hotel), and the menu reflects that range by combining traditional Peruvian dishes with Nikkei (Japanese-Peruvian) and Chifa (Peruvian–Chinese) offerings.
