Austin’s Salty Sow and Waylon J’s Serve a Smoke Break Barbecue Lunch | Eater Austin
"A daytime pop-up collaboration between a long-running dinner restaurant and a trailer-style barbecue team, built to put an underused parking lot to work. The program pairs a custom-made pit with a 1,000-gallon smoker and an experienced pitmaster with the restaurant’s kitchen staff, who handle sides and desserts; the result is an elevated barbecue-focused menu of sandwiches and platters. Standouts include a prime brisket that is sliced (not chopped) and served with pickles, slaw and au jus on a buttered, double-toasted Martin’s Potato Roll; a butter-basted white-meat turkey with Alabama white sauce; and a whole-hog sandwich finished with cracklin’ pork belly and a whiskey-maple/“gold” barbecue glaze. The offering also features a signature sausage described as moist and perfectly balanced, a Sichuan bacon rib with whiskey-maple mop and chili crisp, and classic sides like pinto beans, coleslaw, mac and cheese, and potato salad.
