"Opened in the Loop at 218 W. Washington Street, this Detroit-founded salad restaurant (originating in 2014) is the third location from founder Kelly Schaefer as she expands into Chicago. Schaefer, a French Culinary Institute graduate, applies a cheffy approach to dressings—which she prefers to call 'sauces'—with choices like miso, chipotle ranch, and pomegranate sumac. The compact 900-square-foot spot serves fresh, made-from-scratch salads, warm bowls, grain plates, toasts, smoothies, and wraps using whole produce delivered each morning, and it also offers breakfast sandwiches such as the Blake Burrito (spinach, scrambled eggs, chorizo, roasted sweet potato, avocado, green onion, salsa fresca, and a jalapeño-cilantro-lime sauce).
