"Opening its first permanent space outside San Francisco on Saturday, June 7, this bakery moves from serving the South Bay via the Palo Alto Farmers’ Market to a dedicated storefront inside Mountain View’s the Dean. The debut menu features signature items plus exclusives: a summer choux filled with vanilla crème fraîche whipped ganache and guava-kalamansi, topped with a pink craquelin and a chocolate wolf; a savory jalapeño helix—twisted croissant dough with jalapeño-cheddar béchamel finished with hot honey; and a kouign-amann riff packed with Philly cheesesteak filling, caramelized onions, and peppers, with a fuller savory lineup planned in the coming months. Co-founder Lawrence Lai, who died before the opening, heavily influenced both the menu and the darker, more masculine interior—burnt-wood bar treated with shou sugi ban, copper and origami-like chairs and lighting—intended as a blueprint for future outposts.
