"Hudson’s Hill Country, the third restaurant iteration of the iconic Hill Country restaurant formerly known as Hudson’s on the Bend, is now open. The menu, under executive chef John Sturdivant and owner Dilum Chandrasoma, pays homage to the classic dishes such as chicken-fried antelope and smoked quail with buffalo sauce. The restaurant, originally opened by Jeff Blank in Hudson Bend in 1984, has undergone several changes in ownership and renovations.
