"I followed James Simon’s Mais la Seafood crawfish truck and heard him speak as a Cajun about the centrality of proper prep: washing crawfish until the water is clear, seasoning the pot with onion and garlic, then adding corn, sausage, potatoes, and sweet potatoes, and finally adding ice just before serving so the crawfish sink and absorb the seasoning.
