"Having set up shop in Eugene and Salem in 2017, this Thai-style rolled ice creamery, 22 Below, is headed to Goose Hollow, taking over a former Subway on Jefferson Street in Southwest Portland. Their ice cream is coconut-based and entirely lactose-free, made by pouring liquefied ice cream onto a freezing surface and scraping it into visually appealing rolls. The menu includes flavors and toppings such as banana, matcha, lemon, strawberry, lavender, Pocky sticks, Oreos, chocolate, and cheesecake, and while the base is non-dairy there are dairy toppings available; other locations have also offered cotton candy, crepes, and bubble tea. The shop comes from an Eugene couple, Kady Chen and Yao Zhang, who opened their first store in Eugene last April and reportedly drew solid crowds before taking the concept to Salem in August.
