"In Naperville the Mexican restaurant is growing up: Fat Rosie’s opened four years ago as the chain’s fourth location (Frankfort opened in 2015, with Lincolnshire and Schaumburg following), and on Thursday staff moved across the street into a larger space with a new menu helmed by venerable Mexican chef Dudley Nieto. Nieto, who curated Pilsen Gourmet and joined the operation about a year ago in anticipation of the move, developed an Ensenada-style seafood bar serving consome de camarón, cachetona de pulpo y camarón, oysters, ceviche, and more — a seafood experience he says will be unlike any other in the area. Founder Scott Harris, the same operator behind Mia Francesca and involved with the Purple Pig, originally catered to a suburban crowd drawn to boozy, sugary margaritas and chips and salsa, but the new direction signals a shift toward more sophisticated coastal Mexican offerings.
