Sourcing ingredients from the region, the focus here is on wood-fired fare — like corned pork shank served with gruyere potato purée, cabbage, green apple, puffed farro, and caraway vinaigrette as well as rotisserie chicken served with Anson Mills cheddar grits, mole verde, elote, okra, bacon, and cilantro.
