Welcome to Salvaje (sal-va-hay). We are a wine bar with a focus on natural wines. To us, natural wines are made with grapes grown organically on biodynamic farms or at a minimum with sustainability in mind. They are wild fermented with native yeasts, cellared with minimal intervention, and contain little to no sulfates or other additives. Each of the wines we serve reflect most or all of these characteristics. Wines that have a sense of the places they come from -- the climate, soil, and surroundings. These farming and wine making practices along with a wide variety of grapes make each glass of natural wine a unique and memorable experience.
