"A Spanish tapas spot that opened inside a hip hostel just a year prior and is now being converted into a more globally focused restaurant. Only the egg-and-potato tortilla española topped with house Spanish hot sauce will remain from the original menu, but the kitchen’s techniques—use of vinegars, fermentation, and preservation—and its rooftop garden will carry over.
