"A Houston-born, health-focused bakery opening its first brick-and-mortar this spring at 2313 Edwards Street in Sawyer Yards. Founded by Jennifer Thai after she began selling treats at farmers markets while searching for allergy-friendly snacks for her daughter, the shop specializes in vegan, dairy-free, soy-free offerings that are also free of gluten, refined sugars, eggs, and nuts. Signature items include famed oatmeal chocolate chip muffins baked without sugar and sweetened naturally with coconut, squash, sweet potatoes, apples, and pears; vegan brownies made with black beans; blondies made with chickpeas; and dairy-free ice cream served in gluten-free waffle cones. The beverage program will feature nitro cold brew made with beans from a local Houston roaster, and the bakery is currently expected to open in April." - Amy McCarthy
