"Determined to maximalize the New York bagel experience, this Hudson Valley bagelry stuffs the fillings into the dough itself and is opening its first New York City location in Greenwich Village at 58 West Eighth Street, near Sixth Avenue, on Friday, December 5. Co-owners and husband-and-wife duo Jeremy Rhodes and Ali Chetkof Rhodes and their team load bagels with options like scrambled eggs-cheese (with bacon, sausage, and a vegan sausage iteration), pastrami Reuben, Buffalo chicken, and cheese pizza, hovering in the $11 range, then boil and bake the whole thing. Once ordered, staff can finish each bagel with on-the-spot seasonings—everything, sesame, poppy, or onion—or leave it plain, and there’s a trio of dipping sauces, including the mustardy house Mooney, ranch, and a Calabrian chile aioli.
