"Slated to open this spring in the resort's shorefront seafood venue that closed in 2024 (after plans for Fabio Trabocchi’s Fiola Mare fell through), the new seafood restaurant will be helmed by Executive Chef Martin Heierling — most recently with the Nobel 33 hospitality group and restaurants like Toca Madera in Las Vegas — who is designing a menu featuring caviar and crudo, seafood platters, fresh pasta, and fish dry-aged in-house. Located on the shore of the property's Lake of Dreams, which stages regular shows of dancing lights and a singing frog, the space is being redesigned with reflective mosaic floors, embroidered velvet walls, mirrored portholes, a seafood display, and an expansive bar. Wynn Las Vegas’ mixologist Mariena Mercer Boarini will develop a Mediterranean-themed cocktail program, and the resort’s executive pastry chef Jennifer Yee will spearhead the dessert menu." - Janna Karel
