"I've learned that Bamboo Sushi's sixth location will open January 9 in downtown Lake Oswego inside the Windward apartment development at 380 1st Street, next door to Salt and Straw. Its menu will be familiar to fans—sushi rolls, nigiri, sashimi, and other shared plates with strong Japanese influences—but will also include new additions like pan-roasted trout and unique off-menu specials throughout the year to promote a local, seasonal approach. Like all Bamboo locations, this one will heavily emphasize sustainability not only in seafood sourcing but also in the design of the building, with sustainable materials and equipment incorporated throughout. The aesthetics are said to be warmer than other locations, drawing from Japanese sensibilities with lots of wood tones, natural greenery, and art from Portland-based photographer Corey Arnold. Although it opens in winter, the restaurant will have a sprawling patio with over 30 seats for outdoor dining by summertime; it will be open 5 to 10 p.m. nightly starting January 9 with happy hour Monday through Friday from 5 to 6, and a $90 New Year’s Eve preview dinner will be available by reservation." - Alex Frane
