"On Bainbridge Island I found the Nguyen siblings' new Vietnamese restaurant, Ba Sa, at 101 Winslow Way East, which honors their upbringing and blends Southeast Asian influences with lessons in sustainability. The menu focuses on small plates sourced locally — highlights include Xào Lăn (stuffed wings with ground pork from Oregon’s Carlton Farms, shiitake mushrooms, and curry glaze) and Bò Lá Lõt (betel leaves with beef sirloin, lemongrass, and woven noodles) — alongside shareable dishes like Gỏi Vit (duck breast with baby arugula, ginger vinaigrette, and Thai chili) and the restaurant’s signature bone-in, braised catfish served in a clay pot, a dish their mother used to make. There’s an extensive drinks list with premium sake, local beer, and rotating cocktails such as Blushing Tigers (gin, rosé, lychee, and strawberry), Ba Sa Mules (Icchiko Saiten shochu, ginger, and lime), and Tamarind Sours (Nikka whiskey, tamarind juice, and calamansi). The spacious, light-filled dining room seats 54 with a view into an open kitchen, a patio for additional seating, simple white-and-black decor with light wood tables and subway tiles, and an eye-catching catfish mural by local artist Dozfyon — all intended to create a welcoming, family-oriented spot for locals and daytrippers alike." - Gabe Guarente
