"Having developed a following at farmers’ markets like the weekly Saturday market in Poway—where its booth regularly draws lines of customers—Glutenus Maximus Bakehouse is unveiling its first storefront cafe in Vista on Sunday, June 2 at 9 a.m. What began with owner Casey Smith’s childhood love of making homemade waffles, and progressed through his work at various bakeries, grew into a farmers’ market stall specializing in savory sandwiches built on Liege waffles made from brioche dough with caramelized pockets of pearl sugar; the business has since expanded into cookies, croissants, and other baked goods. The new cafe will operate daily from 7 a.m. to 2 p.m., focus on takeout, and offer a minimalist but cozy interior with a pastry display featuring brown butter chocolate chip cookies, almond croissants, cardamom morning buns, butterscotch pecan sticky buns, and lemon curd–filled cruffins.
