"Opened in 2015, I found Casa d’Paco to exemplify the new Newark: a Galician-infused Spanish restaurant named for owner Angel Leston’s father, Francisco “Paco” Leston, with a DIY family renovation in which father and son did the demolition and built their own tables. With roots in the city and the father returning to help launch the lively spot, they share time in the kitchen turning out creamy zamburinas (scallops), tender pulpo a feira and restorative caldo gallego; Leston’s mother, Ana Maria, makes the homemade desserts, and the crisp, citrusy house white, Paco Luca Albarino, is made for the restaurant by a small Iberian wine importer." - Valerie Stivers
