"Opened in September 2023 in Downtown Summerlin as chef Roy Ellamar’s first project after leaving Harvest by Roy Ellamar at the Bellagio, Fine Company quickly became a brunch destination thanks to Ellamar’s slightly sweet, almost crunchy, pleasantly fluffy banana bread. In its first nine months it built a steady Summerlin following, won an Eater Award for Best New Off-Strip Restaurant, and expanded its hours and menus — adding dinner items like tomato gazpacho and eggplant parmesan and a midday happy hour with cocktails and bites such as pastrami melt egg rolls and salmon tartare with Sriracha aioli. The menu drew acclaim for dishes including dates stuffed with savory lamb sausage, a Jidori fried chicken sandwich slathered in a honey cumin glaze, crispy salt-and-pepper shrimp, and brown butter pancakes. This week Ellamar stepped away from the business, saying the restaurant was heading in a different direction than he intended; LEV Group and CEO Jeffrey Fine will continue operating Fine Company and say the culinary team will maintain the expected experience, with the banana bread staying on the menu while other seasonal changes are possible.
