"A serene rooftop omakase that opened in September 2021, led by chef Solemann Haddad, where Japanese techniques are woven with Middle Eastern ingredients to create a distinctly Dubai cuisine. The hushed, emerald-tiled kitchen and residential-tower rooftop set a quiet, intimate stage for inventive compositions: a cylinder of seaweed-wrapped rice topped with tuna belly brushed in local dates and honey; yuzu-steeped stracciatella dusted with pomegranate molasses and served in a miso muhammara that begs to be eaten with fluffy charcoal khubz; hamachi crudo in a sumac-and-citrus ponzu brightened with za'atar oil; and a fiery hamachi tartare enlivened by shatta.
